Vins de Pays d'Oc

The colour is garnet red with crimson touches. The nose offers aromas of underwood, of plum and cherry, of spices after which notes of vanilla, liquorice and coffee. On the palate, the wine is well-rounded, matching perfectly its delicious bouquet

Soil : Chalky-clayey soil, chalky hillsides and pebbles soils.

Grape varieties : Merlot 60%, Cabernet Sauvignon 30%, Syrah 10%.

Vinification : Grapes are picked up by machine at the optimal maturity and surmaturity for the syrah, with the aim to obtain great characters. The fermentation is going on under temperature control to preserve the aromatic quality of each grape varieties, which are fermented separately. The vatting time is 3 to 4 weeks. During this time, pumping over and treading are done.


Food and wine : A good accompaniement to red meat, small and big game and cheese.

Advice : Uncork a little while before serving. Serve at a temperature of about 18°C.
