Vins de Pays d'Oc
The robe is a high garnet-red intensity. In the first time, the nose has a vanilla and concentrated red fruits note. A blackberry note dominate, sustained by pepper. In the second time, spicy aroma, vanilla and pepper persist. On the mouth, the attack is velvet, powerful and give way to a beautiful round in middle palate. Tannins are present and velvety. This wine end in mouth with a long silky finish.
Soil : Chalky hillside
Grape varieties : 100% Syrah
Vinification : Traditional, the grapes are destemed and crushed. Alcoholic fermentation in traditional tank with a slow extraction by steady pumping-over.
Maceration under the cap during 21 days.
Malolactic fermentation in vat, then the wine is transferred into barrel for the maturing.
Maturing: 14 months in french oak barrels
Food and wine : A good accompaniment to red meat with sauce or grilled, and cheese.
Advice : Serve at a temperature of about 18°C.
